Defrost frozen white corn.
Dice the red onion and jalapeño pepper.
Roast the poblano pepper in the oven by placing it under the broiler on high for 12 minutes, flipping halfway through.
Place the poblano pepper in a bowl and cover with plastic wrap. Let it sit for five minutes. This will make it easier to remove the skin.
Remove the skin and seeds from the poblano pepper.
Dice the poblano pepper.
In a bowl, combine the white corn, red onion, jalapeño, poblano pepper, and cilantro.
Add the juice of one lemon and one lime.
Season to taste with salt and mix well.
