Don’t get us wrong, we love Chipotle just as much as the next person, but we have New Year’s resolutions, and we’re following through. And don’t worry, this copycat Chipotle Corn Salsa is nothing short of delicious. It is sweet and tangy but has a little bit of a kick, which produces the perfect balance of flavors. This recipe will satisfy your cravings and your wallet.

Directions

Step 1

Defrost frozen white corn.

Step 2

Dice red onion and jalapeño pepper.

Step 3

Roast poblano pepper in the oven by placing it under the broiler on high for 12 minutes, flipping halfway through.

Step 4

Place poblano pepper in a bowl and cover with plastic wrap. Let it sit for five minutes. This will make it easier to remove the skin.

Step 5

Remove the skin and seeds from the poblano pepper.

Step 6

Dice the poblano pepper.

Step 7

In a bowl, combine the white corn, red onion, jalapeños, poblano peppers, and cilantro.

Step 8

Add the juice of a lemon and a lime.

Step 9

Season to taste with salt and mix well.
