Directions

Step 1

Roast a poblano pepper in the oven by placing it under the broiler on high for 12 minutes, flipping halfway through.

Step 2

Place the poblano pepper in a bowl and cover with plastic wrap. Let it sit for five minutes. This will make it easier to remove the skin.

Step 3

Remove the skin and seeds from the poblano pepper.

Step 4

Dice the poblano pepper, roma tomatoes, jalapeño pepper, red bell pepper, orange bell pepper, yellow bell pepper, red onion, and chop cilantro. 

Step 5

Drain and rinse corn, pinto beans, and black beans. 

Step 6

In a large bowl, add the diced roma tomatoes, poblano pepper,  jalapeño pepper, red bell pepper, orange bell pepper, yellow bell pepper, red onion, corn, black beans, pinto beans, and cilantro.

Step 7

Add avocado oil, lime juice, red wine vinegar, and honey.

Step 8

Season to taste with salt, black pepper, garlic powder, and onion powder. Mix well.

Step 9

Enjoy.
