Dice the yellow onion and shallot, mince the garlic, and slice the jalapeños.
Chop the chives and parsley, then pull the thyme leaves from the stems and give them a fine chop.
Slice the bacon into strips.
Shred the cheddar and Colby Jack cheese.
Melt the butter over low heat. Once melted, stir in the diced shallot and minced garlic, and cook for about 1 minute, just until fragrant.
Add the chives, parsley, thyme, lemon zest, lemon juice, Dijon mustard, and Worcestershire sauce. Season with smoked paprika, cayenne pepper, and red pepper flakes. Stir everything together until fully combined, then let it simmer for about 2 minutes so all the flavors can come together.
Remove the butter from the heat and set it aside to cool completely.
Cook the bacon until crispy, then transfer it to a plate and blot away the excess grease. In the same pan, add the onions and sauté for 2–3 minutes.
Add the ground beef, breaking it up as it cooks, and cook until completely browned. Add Worcestershire sauce and season with salt, black pepper, garlic powder, onion powder, and a pinch of cayenne pepper. Once fully cooked, drain off any excess grease and set it aside.
Slice the Hawaiian rolls in half and place the bottoms in a baking dish. Spread a generous layer of cowboy butter across the rolls, then layer on the ground beef, crispy bacon, jalapeños, cheddar cheese, crispy onions, and Colby Jack cheese.
Add the top buns and brush them with more cowboy butter.
Bake at 350 degrees for 10 minutes or until the cheese is melted.
