Directions
Step 1
To the catfish fillets, add mustard, Louisiana hot sauce, and an egg.
Step 2
Lightly season with creole seasoning, garlic powder, onion powder, cayenne pepper, lemon pepper, and paprika.
Step 3
Evenly coat the catfish fillets.
Step 4
For the dry batter, combine flour and cornmeal and season with the same seasonings used to season the catfish fillets.
Step 5
Dredge each fillet in the batter, shake off any excess , and place on a baking sheet to rest for 10 minutes.
Step 6
Heat oil in a cast iron skillet or deep fryer to 350 degrees F.
Step 7
Fry the catfish for 3 – 5 minutes on each side or until golden brown.
Step 8
Remove and place on a wire rack so the excess oil can drip off.
Step 9
Enjoy.

- 1 ½ cups flour
- 1 ½ cups cornmeal
- 1 egg
- 2 tablespoons mustard
- 1 tablespoon louisiana hot sauce
