Description

Salt and pepper shrimp is by far one of our favorite Chinese buffet dishes. This dish is as bold as it is delicious. From the crispy coating to the succulent shrimp, each bite delivers a balance of sweet, spicy, and aromatic flavors. Whether you enjoy it as a light snack, an appetizer, or a main course, salt and pepper shrimp is a crowd-pleaser. This dish is simplistic yet bold. In that simplicity, a world of flavors unfolds. 

Directions

Step 1

Slice the jalapeños.

Step 2

Dice a shallot.

Step 3

Mince garlic.

Step 4

Use the toothpick to remove the vein. Gently insert it under the vein at the top of the shrimp’s back. Once the toothpick is under the vein, gently lift the vein out.

Step 5

Remove the eyes from the head of the shrimp and trim the legs.

Step 6

Season the shrimp with salt, black pepper, white pepper, garlic powder, and onion powder.

Step 7

Add cornstarch to the shrimp and coat the shrimp.

Step 8

For the salt and pepper mixture, combine 2 tablespoons sugar, 1 tablespoon salt, and a ½ tablespoon black pepper.

Step 9

Fry shrimp for two minutes or until golden.

Step 10

Transfer ¼ cup of the grease used to fry the shrimp into a skillet.

Step 11

Add shallots and garlic. Cook until fragrant.

Step 12

Add jalapeños and cook on a low fire for 2 minutes or until the peppers are tender.

Step 13

Once the peppers are tender, add the shrimp. Give a good mix.

Step 14

Season the shrimp with a generous amount of salt and pepper mixture.
