Directions
Step 1
Remove the membrane from the ribs.
Step 2
Slice the ribs along the bone.
Step 3
Mince shallot, ginger, and garlic.
Step 4
Lightly season ribs to taste with season all, garlic powder, and onion powder.
Step 5
In a hot pot, add olive oil.
Step 6
Brown ribs on each side.
Step 7
Remove ribs from pot.
Step 8
Add shallots, ginger, and garlic into the same pot. Sauté for 30 seconds.
Step 9
Add red chili peppers, a cinnamon stick, and bay leaves. Cook for 30 seconds.
Step 10
Add dark soy sauce, oyster sauce, hoisin sauce, brown sugar, rice vinegar, and sriracha. Mix well.
Step 11
Add Ribs.
Step 12
Cover ribs with water.
Step 13
Partially cover with lid.
Step 14
Bring ribs to a simmer on a high heat.
Step 15
Lower heat to medium heat and cook for 55 minutes.
Step 16
Remove the lid and base the ribs with sauce.
Step 17
Garnish with sesame seeds and green onions.

- 4 dried red chili peppers
- 2 tablespoons shao xing cooking wine
- 1 tablespoon soy sauce
- 2 tablespoons dark soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sriracha
- 1 1/2 cup water
